PERRY
2023 harvest | wild yeast fermentation | 8.5% ABV
In essence, perry is cider made from pears, and just as ciders have specific apples, so does perry. Our Perry is made from a blend of four English Perry pears: Yellow Huffcap, Hendre Huffcap, Winnals Longdon and Brandy pears. It is dry yet delicate on the palate with a floral nose and chalky tannins.
2021 SYRAH PIQUETTE
Our take on a simple sangria with a twist of Julian and giving serious vibes of wine coolers from ‘back in the day.’ A blend of 70% second-press Syrah and 30% fresh-press Macintosh apples fermented with wine yeast and tank-aged 18 months. 9% ABV
CYSER
Think of it as an apple mead or apple honey wine. We crafted mead from local wildflower honey with a pale ale yeast and cider from a mix of heirloom apples, then blended 60% mead with 40% cider to create this slightly off-dry cyser for a clean, barely sweet floral-apple sip that plays like a white wine. 11% ABV
ORANGE BLOSSOM MEAD
Referred to as the nectar of the gods, mead is a fermented beverage made from honey, water & yeast, sometimes called Honey Wine. Crafted from orange blossom honey and a pale ale yeast and fermented to off-dry, meaning there is just a little residual sweetness for a blossomy, clean sip. 13% ABV
