Currently available in three styles:

Freshly PressedOlives ripen once a year. In the Northern Hemisphere, the fruit is harvested and pressed in the fall, typically October and November, and in the Southern Hemisphere, typically April and May.  We currently feature the following fresh EVOOs:

Picual -  This is an intensely aromatic, yet delicate oil. It has a fruity nose and notes of banana, arugula and tomato leaf with a light pepper finish.

Koroneiki - This Chilean oil is delightfully pungent. It displays prominent notes of green banana and chicory with creaminess and an astringent finish. Country of origin: Chile

Agrumato — Sometimes called ‘fused,’ an olive oil in the agrumato style means the freshly harvested olives are pressed with the whole, fresh fruit or herb.  This extracts tremendous flavor and freshness.  We currently feature the following agrumato olive oils:

Blood Orange - Fresh, whole blood oranges and early harvest certified organic Tunisian olives are crushed together to make this beautiful agrumato. It is exceedingly versatile and delicious on fish or pork, in salads, for baking, and so much more. Try it blended with our Grapefruit White Balsamic or Dark Chocolate Dark Balsamic Vinegars.

Lemon - Fresh, whole Eureka lemons are crushed with early harvest, certified organic olives to produce this amazing agrumato.  Its light, refreshing flavor captures the fresh lemon zestiness and is perfect to sauté shrimp or scallops or to drizzle on chicken or fish. This versatile oil can also be used to bake sweets like biscotti or cakes, and it is fabulous in marinades, salad dressings and drizzled over vegetables. Try it paired with our Jalapeño White Balsamic, Mission Fig Dark Balsamic and Pomegranate Dark Balsamic.

Rosemary - Fresh wild rosemary is crushed with early harvest, fresh-picked, certified organic olives using 100% mechanical cold extraction methods. It is both complex and aromatic. Use anywhere rosemary might be used. Perfect with poultry, pork or lamb. Spectacular drizzled over sautéed vegetables and dazzles with roasted potatoes. Pairs well with Sicilian Lemon White Balsamic and Pomegranate Dark Balsamic.

Jalapeño - ** LIMITED OFFERING ** This South Australian Jalapeño fused olive oil is both fruity and spicy. It’s made by combining fresh green, early harvest Frantoio olives with double the volume of FRESH Jalapeño peppers to really maximize the flavor! These two fresh ingredients are simply crushed together and mixed in a malaxer which releases and combines the green essential oil of the fresh peppers with the olive oil. The resulting marriage boasts lingering spiciness, slightly bitter pleasing green vegetal notes and a vibrant zing from capsaicin. Adds a savory, tantalizing kick to salsas, marinades, soups, grilled foods, vegetables and more. Caution: hot!!

Infused - Our infused oils are made with Certified Ultra Premium Extra Virgin Olive Oil and then infused with pure essential oil - no artificial flavors, colors or other ingredients. The flavors are spectacular! We currently offer:

Basil - Fresh, bright and herbaceous - this amazing infusion is made from Certified Ultra Premium Extra Virgin Olive Oil infused with essential basil oil. Fantastic anywhere you’d like the fresh, herbaceous flavor of basil. Use in marinades, salads, for bread dipping, brushed on vegetables, with poultry and more. Try it on a caprese or summer salad and let your taste buds travel to the shores of the Mediterranean. Pairs great with Sicilian Lemon White Balsamic and Grapefruit White Balsamic.

Butter - This butter olive oil brings together the best of both worlds: the rich flavor of butter with all the health benefits and phenols of extra virgin olive oil.  Made with Certified Ultra Premium Extra Virgin Olive Oil, this creamy, dreamy infused olive oil is vegan, naturally infused, dairy free, and heart healthy. It gets its rich, decadent butter flavor strictly from organic botanical infusions! Use as a melted butter substitute in baking, drizzled over pancakes, potatoes, popcorn or pasta. Perfect for sautéing or to simply dip your bread in.

Cilantro & Roasted Onion - Masterfully blends the flavor of roasted, sweet caramelized onions with fresh, herbaceous cilantro. It’s fantastic for marinating poultry or meat for fajitas, for drizzling over vegetables, grilling, sautéing, in salsas and more. Pairs well with our Honey Ginger White Balsamic Vinegar, Sicilian Lemon White Balsamic and Grapefruit White Balsamic. We love it drizzled into fresh guacamole!

Garlic - The garlic lover’s delight!  This hearty, healthy olive oil is redolent with the pungent flavor of fresh garlic. Its versatility knows no bounds. Use for sautéing, roasting, grilling, drizzling on salads, vegetables, in marinades, with poultry, seafood, pork, dressings, and baked foods. Particularly delightful as a replacement for butter over pasta, baked potatoes, rice or mashed potatoes. Try drizzling on steaks before grilling, or simply for bread dipping with herbs.

Ginger & Black Garlic - Earthy, savory, and sweet, it is great for marinades, bread dipping, incorporating into dressings, finishing chicken or fish off the grill, stir fries, sauces, and more! We especially like it drizzled into ramen.

Herbes de Provence - This classic Provençal herbal combination includes notes of lavender, rosemary, savory, thyme and bay leaf.  It’s a show stopper drizzled over grilled lamb or chicken, used in marinades, brushed on roasted vegetables for grilling, brushed on turkey before roasting, as well as for bread dipping or in aioli. Pairs superbly with our Lavender Dark Balsamic!

Tuscan Herb - Contains a harmonious and delicious combination of herbal flavors including oregano, rosemary, marjoram and garlic. Use to sauté, grill, broil, roast and bake. It brings spectacular flavor to just about anything. Try with chicken, vegetables, potatoes, pork, pasta, rice, turkey, sauces, marinades, vinaigrettes, aioli, bread dipping and more. Pairs well with Sicilian Lemon Balsamic, Pomegranate Balsamic, Traditional Balsamic, and Mission Fig Balsamic Vinegars.

Wild Mushroom & Sage - Contains a delicious combination of fresh, herbaceous sage combined with an array of wild mushrooms including Cremini, Shitake, and Porcini. The result is a rich, savory experience that can be used in so many culinary applications. Try drizzled into mashed potatoes or scrambled eggs. Excellent with roasted potatoes, chicken and all types of poultry, with grilled or roasted vegetables, in aioii, cream sauces and more. Makes a fantastic vinaigrette when paired with our Neapolitan Herb Balsamic or our Sicilian Lemon White Balsamic. Our favorite use, though, is drizzled over freshly popped popcorn with a sprinkle of parmesan and sea salt - delicious!
